Creamy salmon capers lemon whole wheat pasta



I created this recipe based on the availability of the items in my fridge and my pantry. I am supposed to be on my Protein sparring diet but today is the cheat day. Hey, Im being good by using whole wheat pasta :).

For Salmon lover like mua, it does taste heavenly and it takes half and hour to make.

Recipe: (For 2 pax)

1 piece salmon steak
1 onion (Chopped finely)
1/2 cup milk
1/2 cup heavy cream
1 table spoon capers (wash with cold water 2 times and crush half of them)
half a lemon zest
6 cherry tomatoes halved
1 tablespoon of chopped parsley
chicken stock
salt & pepper to taste
2 tablespoon grated parmesan cheese.
juice from half of a lemon
3 tablespoon of olive oil

Direction:

1st and foremost, season the salmon with salt & pepper. Heat up a small pan with 1 tablespoon of olive oil and pan fry the salmon to your liking. Once the fish is ready, take it out and break it to small pieces and omit the skin and bones.

For Pasta: Boil water with chicken stock and a little bit of salt for 10 minutes or until al dente. (Timing have to be precise during this process.) 5 Minutes before your pasta is ready, you must start the sauce immediately. Once pasta is ready, keep 1/2 cup of the water for thinning purpose and drain pasta.

Using the same pan, add the remaining 2 tablespoon of oil and fry the onion until golden. Then add the lemon zest and capers. Fry for another 1 minute and add cream and milk, when the sauce is simmering not boiling, add the cherry tomatoes, parsley and fish. Season with salt & pepper to your liking.

Take the pan off the fire and add the pasta and toss gently so not to break the salmon flakes. If the sauce is too sticky, add the water you saved from the boiled pasta until you reach the consistency you want.

Plate it up and serve with the grated parmesan on top.

Note:

You have to prepare the salmon steak before anything else. I usually start boiling the pasta the moment I am done with pan frying the salmon. Since I have to start the sauce 5 Minutes after the pasta starts boiling, I have the 1st 5 minutes to flake the salmon. Take that for time management :).
