Egg & Potato salad

Recipe:

8 Potatoes (Holland)
4 Hard Boiled Egg ( Cut into 4 )
Baby Romaine Lettuce
1 Cup Low Fat Mayonnaise
1/2 Cup Parmesan Cheese Grated
Salt & pepper to taste

Direction:

Skin the potatoes and boil with salt added in the water until soft.
Cube the potatoes and add the baby romaine lettuce, eggs, mayonnaise and the Parmesan cheese. Toss and add salt & Pepper to taste.
