Instant Tomyam
This is such a yummy easy dish especially in the rainy day. Please note, I can't take spicy food, hence the light colour. It is still very yummylicious mind you. ;)
Recipe:
Instant Tomyam paste ( I used the tomyam paste I bought from Marriots Phuket)
10-12 shrimp or 8 oz (head-on and shell-on but chop the eyes part off. De-vein if you wish)
Chicken meat cut small
1 lime
6 bird’s eyes chilies (pounded)
3 slices galangal
6 kaffir lime leaves (bruised)
2 shallots diced
2 teaspoons fish sauce or to taste
1 stalk lemongrass (use the white part only, pounded with a cleaver)
6 straw mushroom
6 baby corns (halves)
Direction:
Boil 4 Cups of water. Once water is boiling, add the instant tomyam paste, prawn, chicken, baby corn and mushrooms. Cook for 3 minutes and add the kaffir lime, galangal, lemongrass, shallots and chillies.
Add the fish sauce to taste and lastly squeeze the lime juice at the last minute because if you add the lime juice earlier, your tomyam will be bitter.
